At Fair Knowe we are convinced that stewardship of God’s creation is a beautiful part of a truly human life.  Acting as stewards of our animals we experience in a special way God’s abundant goodness.  We find that agricultural practices that respect the natures of the animals are the path to truly nourishing and satisfying foods.

We raise Tamworth pigs and honeybees. 

We chose the Tamworth breed of pig because of their remarkable ability to forage.  Left behind by commercial producers because they do not gain weight on grain as quickly as other breeds, these heritage breed pigs excel in producing lean, flavorful meat on reduced amounts of grain, supplemented by the forage of pasture and forest. 

Our honeybees, unlike the bees of most commercial producers, are the object of consistent attention throughout the year.  Periodic examination of hives allows for treatments tailored to the needs of each hive, rather than uniform application of high amounts of antibiotics and fumigants.  Our completely raw honey is simply put through a wide sieve so as to retain its deliciously rich and diverse elements.   Many have remarked that this honey tastes unlike any honey they have ever tasted.  One reason may be that each batch is harvested and extracted without being mixed with honey produced at a different time in the season -- which means from a different array of flowers.  This leads to honeys that have notably diverse and undiluted flavors.
